Mung Bean Soup
INGREDIENTS
1 cup mung beans (rinsed thoroughly)
5 cups water
3β4 tbsp sugar (or rock sugar)
Squeeze of lemon juice (to keep the beansβ coloring)
Optional addβins
Pumpkin cubes (adds natural sweetness)
Coconut milk
Cooked sago pearls
Ice cubes (for the summer version)
INSTRUCTIONS
1. Instant Pot (easiest)
Add mung beans, water, sugar (and pumpkin if using).
Use Soup or Bean setting.
Let pressure release naturally for ~20 minutes.
Cool and serve.
2. Stovetop (traditional + best flavor)
Boil mung beans 3β4 minutes.
Drain and rinse under cold water (helps soften skins).
Return beans to pot with β of the water + lemon juice. Cook 8 minutes.
Add another β water, cook 8 minutes.
Add final water + sugar, cook 10 minutes.
Slightly mash if you prefer a thicker texture.
Serve warm or over ice and enjoy!
