Root Harmony Soup
INGREDIENTS
1 Chinese Radish (Daikon), peeled & chopped
1 Beetroot, peeled & chopped
1 Large Carrot, peeled & chopped
A handful Chinese Red Dates
A few pieces Fresh Ginger
8 cups water
Salt to taste
INSTRUCTIONS
Peel and chop all vegetables into large chunks.
Place vegetables and water into a pot.
Use scissors to snip red dates directly into the pot.
Bring to a boil, then reduce heat and simmer for 2 hours.
Season with salt and serve warm.
