Root Harmony Soup

INGREDIENTS

  1. 1 Chinese Radish (Daikon), peeled & chopped

  2. 1 Beetroot, peeled & chopped

  3. 1 Large Carrot, peeled & chopped

  4. A handful Chinese Red Dates

  5. A few pieces Fresh Ginger

  6. 8 cups water

  7. Salt to taste

INSTRUCTIONS

  1. Peel and chop all vegetables into large chunks.

  2. Place vegetables and water into a pot.

  3. Use scissors to snip red dates directly into the pot.

  4. Bring to a boil, then reduce heat and simmer for 2 hours.

  5. Season with salt and serve warm.
