Stuffed Spiced Nut Apples
INGREDIENTS
4 apples (Honeycrisp, Fuji, or your favorite variety)
½ cup oats (spleen-strengthening, grounding)
¼ cup chopped nuts (walnuts, pecans, or almonds — warming and yang-supportive)
2–3 tbsp brown sugar or maple syrup
1 tsp cinnamon (warms yang, moves qi)
Pinch of nutmeg, cardamon or clove (warming, disperses cold)
2 tbsp olive or coconut oil
Optional: raisins or dried cranberries (blood-nourishing, gently warming)
½ cup water for baking
INSTRUCTIONS
Preheat oven to 375°F.
Core the apples, leaving the bottoms intact to create a little “cup.”
In a bowl, mix oats, nuts, sugar/maple syrup, cinnamon, and spices until crumbly.
Stuff each apple generously with the oat mixture and drizzle the oil on top.
Place apples in a baking dish and pour water into the bottom to keep them moist.
Bake for 35–45 minutes, until the apples are soft and the filling is golden and fragrant.
