Sweet Potato Tots
INGREDIENTS
2 cups cooked, mashed sweet potatoes
1 cup panko breadcrumbs (or gluten-free alternative)
1 tbsp ground flaxseed + 3 tbsp water (egg replacer)
Β½ tsp garlic powder
Β½ tsp onion powder
Salt & pepper to taste
Optional: chopped herbs, turmeric powder, or nutritional yeast for extra flavor
INSTRUCTIONS
Mix flaxseed and water in a small bowl, let sit 5 min
Combine all ingredients in a food processor or blender until it forms a smooth paste
Shape into small tots and place on a lined baking sheet
Bake at 400Β°F for 20β25 min, flipping halfway until golden and crisp. Enjoy the crisp!
