Sweet Potato Tots

INGREDIENTS

  1. 2 cups cooked, mashed sweet potatoes

  2. 1 cup panko breadcrumbs (or gluten-free alternative)

  3. 1 tbsp ground flaxseed + 3 tbsp water (egg replacer)

  4. Β½ tsp garlic powder

  5. Β½ tsp onion powder

  6. Salt & pepper to taste

    Optional: chopped herbs, turmeric powder, or nutritional yeast for extra flavor

INSTRUCTIONS

  1. Mix flaxseed and water in a small bowl, let sit 5 min

  2. Combine all ingredients in a food processor or blender until it forms a smooth paste

  3. Shape into small tots and place on a lined baking sheet

  4. Bake at 400Β°F for 20–25 min, flipping halfway until golden and crisp. Enjoy the crisp!
