These Peanut Butter Pumpkin Bites are no‑bake, portable, and packed with fiber, protein, and healthy fats—perfect for tossing in your bag, eating between classes, or powering through the week.

From a TCM perspective, pumpkin helps strengthen the Spleen and Stomach, supporting digestion and energy, while peanuts (and nut butters) help nourish Qi and Blood. Together, they make a snack that’s both comforting and sustaining—ideal for fall transitions.


Peanut Butter Pumpkin Bites

INGREDIENTS

  1. 1 cup oat flour

  2. ½ cup oats

  3. 3–4 tbsp honey (or maple syrup)

  4. ½ cup peanut butter (or almond/sunflower butter)

  5. 2 tbsp chia or flax seeds

  6. ½ cup pumpkin purée (not pie mix)

  7. 1 tsp vanilla extract

  8. ½ tsp pumpkin pie spice

  9. ¼ tsp sea salt

  10. ¼ cup mini chocolate chips (optional)

*Feel free to adjust spices to fit your tastebuds

INSTRUCTIONS

  1. Mix all ingredients (except chocolate chips) in a bowl or food processor until smooth.

  2. Stir in chocolate chips.

  3. Chill mixture in the fridge for 15–20 minutes to firm.

  4. Roll into small balls (or fun shapes).

  5. Store in the fridge or freezer for easy grab‑and‑go snacking. Enjoy a small taste of fall!
