Baked Apple-Pumpkin Oatmeal
INGREDIENTS
2 eggs
1 (15 oz) can pumpkin purée (not pie mix)
½ tsp vanilla extract
¼ cup maple syrup
¼ cup brown sugar (or coconut sugar)
½ tsp ground cinnamon
¾ tsp pumpkin pie spice
½ tsp salt
¾ tsp baking powder
1 cup almond milk (or milk of choice)
2 ½ cups old‑fashioned oats
1 cup chopped apples (Gala or Honeycrisp work best)
INSTRUCTIONS
Preheat oven to 350°F and spray an 8×8 baking dish.
In a large bowl, whisk together eggs, pumpkin, vanilla, maple syrup, sugar, cinnamon, pumpkin pie spice, salt, and baking powder.
Add almond milk and whisk well.
Stir in oats and chopped apples (save a few apple pieces for topping).
Pour mixture into baking dish, sprinkle with remaining apples.
Bake 40–45 minutes, until a toothpick comes out clean.
Serve warm as a cozy breakfast, or cut into bars for grab‑and‑go snacks!
