Green Pea & Fresh Mint Hummus
INGREDIENTS
1 15-oz. can chickpeas, rinsed and drained
ยฝ cup frozen peas, thawed
2 tbsp lime juice
1 small clove garlic, peeled and halved
2 tbsp fresh mint, chopped
2 tbsp tahini (optional, omit if not on hand)
1 tsp lemon zest
Sea salt & black pepper, to taste
โ cup water
INSTRUCTIONS
1๏ธโฃ Blend Base Ingredients โ In a blender or food processor, combine the chickpeas, lime juice, garlic, tahini (if using), and water. Blend until smooth.
2๏ธโฃ Add Flavor โ Add peas, mint, lemon zest, salt, and pepper. Blend again until nearly smooth.
3๏ธโฃ Chill & Serve โ Refrigerate until ready to enjoy. Serve with fresh veggies, crackers, as a spread, or take a spoonful!
