Pumpkin and Black Sesame Smoothie

INGREDIENTS

  1. 1 cup raw pumpkin seeds

  2. ¼ cup black sesame seeds

  3. 2–3 pitted dates (or 1–2 tbsp maple syrup)

  4. Pinch of sea salt

  5. 4 cups water (plus extra for soaking)

    Optional add‑ins:

  6. ½ tsp vanilla extract

  7. 1–2 tsp honey or maple syrup (for extra sweetness)

INSTRUCTIONS

  1. Soak pumpkin seeds and black sesame seeds in water for at least 4 hours or overnight.

  2. Drain and rinse the seeds thoroughly.

  3. Add soaked seeds, 3 cups of fresh water, dates or sweetener, vanilla (optional), and salt to a blender.

  4. Blend on high until completely smooth and creamy.

  5. Strain through a nut milk bag or fine mesh strainer if you prefer a smoother texture.

  6. Store in a sealed jar in the fridge for up to 3 days. Shake before drinking and enjoy!
