Thanksgiving Leftover Frittata

INGREDIENTS

  1. 2 cups leftover stuffing (any variety: cornbread, sourdough, wild rice)

  2. 6 large eggs

  3. Β½ cup milk (dairy or plant-based)

  4. 1 cup leftover roasted vegetables (Brussels sprouts, carrots, squash, etc.)

  5. Β½ cup shredded cheese (cheddar, mozzarella, or whatever’s on hand)

  6. Salt & pepper to taste

  7. Olive oil or butter for greasing the pan

    *Optional: add other leftover dishes to your liking! Ex: cranberries, mashed potatoes, other greens

INSTRUCTIONS

  1. Preheat oven to 375Β°F.

  2. Whisk eggs & milk together in a bowl, season with salt and pepper.

  3. Fold in stuffing, veggies, and other leftovers until evenly combined.

  4. Grease a baking dish or ovenproof skillet, pour mixture in, and sprinkle cheese on top.

  5. Bake for 25–30 minutes, until eggs are set and top is golden.

  6. Cool slightly, slice, and serve warm.
